The aroma. Oh, the aroma.
The Bouquet is a microlot from Finca Los Naranjos in southern Costa Rica, and it utilises a black (or “full”) honey process to produce complex, rich coffees that are wonderfully balanced between a "washed" and "natural" profile.
They achieve that by only picking the ripest coffee cherries, that are depulped usually within 8-12 hours, but with ALL of the fruity mucilage left on the seed (bean). This produces a sugary 'bath' for the coffees to ferment in after being moved to dry on raised beds. The result is a balanced, sweet, fruit forward coffee with an incredible aroma.
